VEGETARIAN COBB SALAD.
In 1937, Hollywood restaurateur Bob Cobb invented the Cobb salad, a traditional main-dish American garden-style salad. According to wikipedia, it is typically prepared with finely chopped greens, a juicy tomato, bacon, chicken, eggs, avocado, chives, and Roquefort cheese.
This is my vegan take on a Cobb salad, using vegan bacon, chickpeas in place of chicken, and radishes in place of eggs (I know, it's not even close, but it's still delicious). We'll also use a tasty, creamy ranch dressing in place of cheese or red wine vinaigrette. You'll probably agree that the combination is delicious.
This salad is wholesome, filling, and ideal for lunch or dinner. Additionally, you can pack it up and bring it with you for brown bag lunches. I frequently prepare a large batch of salad and graze on it all day. It is incredibly delicious and simple to eat.
This salad also contains a ton of protein, fiber, vitamins, and minerals. Check out the recipe card's nutrition information; it's incredible!
Notes regarding the ingredients.
This recipe uses mostly fresh ingredients to make a vibrant vegan Cobb salad that is flavorful and satisfying. Leafy greens are chopped and topped with a variety of toppings and creamy dressing.
What you will need is as follows:.
•Romaine - Crunchy iceberg or endive also tastes good.
•Coconut bacon - You can either make your own homemade coconut bacon or, for convenience, buy it online.
•Chickpeas - Roasted chickpeas make a delicious crunch, but canned or freshly cooked chickpeas also taste great.
•Corn: I prefer fresh corn on the cob, but canned or frozen corn that has been thawed is also excellent.
•Tomatoes - Cherry or grape tomatoes that are in season and are fresh and juicy work best.
•Radish: Adds color and crunch. Slice or chop them thinly.
Although it is optional, avocado gives the salad a nice creaminess.
•Red onion - Green onions work just as well as red onions.
•Vegan Ranch Dressing - I prefer to make my dressing from scratch, but if you'd rather save time, feel free to use a good vegan ranch.
